Kässpätzle (Cheese pasta) & Onions

Ingredients

  • 1/2 bunch of parsley
  • 4 eggs
  • 320g flour
  • 1 tbsp thyme
  • 1 tbsp sage
  • 160g grated mountain cheese
  • 160g onions
  • 40g butter
  • Salt
  • Pepper

Preparation steps

  • Chop parsley and blend together with the eggs until you have a smooth texture. Mix flour with egg-parsley mixture. Combine 1/2 tsp salt with 100-150ml water. Add thyme and sage. Knead the dough until it creates bubbles.
  • Use a "Spätzle" shaver to shave the dough into a big pot with boiling salt water so that it creates small pieces of pasta. When the pasta comes to the top, use a strainer to get them out. Put the pasta into an oven-proof dish. Mix pasta with grated cheese and put more cheese on top.
  • Bake the pasta with cheese in the oven at 200° celsius for 20 minutes or until golden brown at the top.
  • Cut the onions into slides and fry them in the butter. Season with salt and pepper. Take them out of the pan when they are browned. Serve with the pasta.
