Potato soup

Ingredients

  • 500g potatoes
  • 1 carrot
  • 1 stick of celery
  • 1 onion
  • 1 small leek
  • 750ml water
  • 1 heaped tbsp vegetable stock
  • 100g cream or crème fraîche
  • Marjoram
  • Salt
  • 4 (veggie) wiener sausages

Preparation steps

  • Wash potatoes, peel them and cut them into cubes.
  • Wash carrot, peel it and cut it into stripes.
  • Cut the celery into cubes.
  • Finely chop the onion.
  • Cut leek in half, wash it in between the layers and cut into fine stripes.
  • Bring water to a boil with vegetable stock. Add potatoes, carrot, celery and onion. Let it simmer for 20 min.
  • Simmer the leek in a separate pot with water for 10 min.
  • Use a stick blender to blend the potato soup roughly. Add the leek and cream or crème fraîche. Season to taste.
  • Cut the sausages in pieces and add into the soup.
