Apricot filled dumplings

Ingredients

  • 250g low fat curd cheese
  • Zest of 1 lemon
  • Salt
  • 2 eggs
  • 200g flour type 1050
  • ca. 16 small ripe apricots (or plums)
  • 50g margarine or butter
  • 4-6 tbsp breadcrumbs
  • Cinnamon
  • Sugar
  • 2 l of water, slightly salted

Preparation steps

  • Mix curd cheese, lemon zest, a bit of salt, eggs and the flour.
  • Wash the apricots (or plums).
  • Knead the dough and form ca. 16 dumplings. Put the apricot (or plum) in the middle.
  • Boil the salt water and put the dumplings in. Let them simmer for 20-25 minutes.
  • Heat up the fat in a pan, add the breadcrumbs and toast them until they are golden. Serve them on the dumplings along with sugar & cinnamon.
