Apricot filled dumplings

Ingredients
250g low fat curd cheese
Zest of 1 lemon
Salt
2 eggs
200g flour type 1050
ca. 16 small ripe apricots (or plums)
50g margarine or butter
4-6 tbsp breadcrumbs
Cinnamon
Sugar
2 l of water, slightly salted
Preparation steps
Mix curd cheese, lemon zest, a bit of salt, eggs and the flour.
Wash the apricots (or plums).
Knead the dough and form ca. 16 dumplings. Put the apricot (or plum) in the middle.
Boil the salt water and put the dumplings in. Let them simmer for 20-25 minutes.
Heat up the fat in a pan, add the breadcrumbs and toast them until they are golden. Serve them on the dumplings along with sugar & cinnamon.
